Biography

Her main research interests involve the use of in vitro digestion models of human gastric and duodenal digestion and the effects on human colonic microflora investigated in an in vitro fermentation system. She is involved in the determination of the potential prebiotic effect of plant materials using human gut bacteria.

Research Interest

My main research interest involves the basic physiology underlying the digestion of food materials within the gastrointestinal (GI) tract. I am particularly interested in simulated in vivo studies investigating human digestion in relation to gut health. The bioaccessibility of nutrients and phytochemicals from various food matrices has important implications in the areas of disease prevention and management. The study of functional food ingredients and their behaviour in the gastro-intestinal tract and how it may influence the immune system, calcium absorption and bone health as well as lipid and sugar metabolism.
