Milla Alves Baffi Ph.D. in food microbiology, has been working on biochemistry, genetics and microbiology since 1996. She did graduation in biology, masters in genetics and doctorate in biochemistry by Sao Paulo State University (UNESP, Brazil) and post-doctorate in applied microbiology by University of Castilla La Mancha (UCLM, Spain). At present, she is professor of applied bioprocesses, biochemistry and environmental microbiology for the Environmental Engineering Course at Uberlândia Federal University (UFU), in Brazil. She also teaches for post-graduation in Biofuels at the same University. She is member of the editorial board of several international journals on biotechnology and microbiology. Her research has been focused on bioprocesses and fermentations, with emphasis for yeast microbiota from the phyllosphere of grapes and wines, microbial enzyme production for wine aroma improvement, selection of yeast starter cultures for wine industry and identification and selection of yeasts and fungi for the production of prospective enzymes for the biomass convertion in bioethanol.
