Medical Nutrition Therapy (MNT) and Dietary Assessment

Medical Nutrition Therapy uses food to anticipate and reverse diseases that plague most western societies:  obesitycardiovascular disease, arthritis, diabetes and depression. In order for food to be therapeutic, it must be nutrient-dense, measured in part by the nutrients and anti-nutrients, contained in consumed foods. A special evaluation for food and nutrient intake and dietary pattern of an individual or individuals in the household or population group over time i.e., Dietary assessment.
Dietary Assessment is also concerned with the way that foods are prepared and delivered for consumption. In order for foods to be therapeutically useful, the acceptable micro- and macronutrients should be delivered in a highly nutritionally dense format while not contaminants.
