Carlos Augusto Fernandes de Oliveira graduated in Veterinary Medicine in 1983, and received his Masters (1991) and PhD (1994) in Public Health at the University of São Paulo (USP). Since 2009, he is Full Professor at the Department of Food Engineering, School of Animal Science and Food Engineering of USP. Dr. Carlos Oliveira was the Head of Department of Food Engineering (2007-2011), and currently he is the head of the research working group registered at the National Council for Research Development (CNPq/Brazil) in the area of Milk Quality and Mycotoxins in Food Products. He has published 113 articles in referred journals, 12 chapters of book and presented 117 papers at conferences.

Research Interest

The research interest of Dr. Carlos Oliveira focuses on several microbiological aspects of milk and milk products, including detection, molecular identification and prevention of pathogenic microorganisms, development of probiotics products and the effects of microbial and cellular counts in milk on the overall quality of dairy products. Studies on toxins produced by molds (mycotoxins) and their residues in dairy products are also conducted, as well as the risk assessment of the mycotoxin exposure in the human diet.
