Oxidative stability of peanut oil and peanut butter measurement and Schaal oven method were used Rancimat method , and the correlation between the two methods were analyzed . The results showed that : an alternative to traditional peroxide value determination evaluate oxidative stability of peanut oil and peanut butter are possible by Rancimat method .
