The phytochemical components such as alkaloids, saponin, tannins, steroids, anthocyanins, flavonoids and anthroquinones were extracted using different solvents namely ethylacetate, methanol, chloroform and acetone. Specific antinutrients are extracted more in methanol and ethyl acetate solvents other than ethanolic extract. The oxalate and trypsin inhibitors were highly observed in sweet potato.
