Junsang Ham has completed his Ph.D from Seoul National University in Korea and postdoctoral studies from McGill University in Canada. He is a senior researcher of Korea Rural Development Administration, and has been working at Wageningen UR in Netherlands since last April. He has published more than 130 papers of which 65 are by Scopus retrieved. The scientific interest is on lactic acid bacteria of dairy products and their potential health benefit.
It is well known that milk protein such as casein and whey proteins is a precursor protein to generate bioactive peptides released by lactic acid bacteria (LAB) (Korhonen, 2009) including Lactococcus lactis (L. lactis), Lactobacillus rhamnosus (Lb. rhamnosus), Streptococcus thermophilus (St. thermophilus), Lactobacillus lactis (Lb. lactis), Lactobacillus helveticus (Lb. helveticus), Lactobacillus subsp. bulgaricus (Lb. bulgaricus). However, bioactive peptide production by fermentation with Bifidobacterium hardly documented in literature except research for hypocholesterolaemic effect by Alhaj et al (2010) and Al-Sheraji et al (2012) from casein hydrolysate after incubation with Bifidobacterium animalis subsp. lactis (Bb12) and from yoghurt containing with Bifidobacterium pseudocatenulatum G4 (or Bifidobacterium longum BB536), respectively. On the other hand, no report for another bioactive peptide including antioxidant peptide by Bifidobacterium strains has been reported until date. We screened Bifidobacterium in the fecal samples of neonates from 5 provinces in Korea, and selected a strain which can grow in MRS broth without anaerobic device and can form curd in skim milk broth. The selected Bifidobacterium was registered as KACC 91563 and applied for patent. We analysed the complete genome and two plasmid sequences of Bifidobacterium KACC 91563, and investigated the antioxidant properties of bovine casein hydrolysate after hydrolysis with Bifidobacterium longum KACC91563. Study on the immunomodulation effect of Bifidobacterium longum KACC 91563 was also carried out, and the results will be presented.
