UNCuyo's students recently conducted research and discovered methods of cutting and preparing food can affect many nutrients retained in a meal. Thiosulfinates in garlic and onions do not show its effect of platelet aggregation and microparticle shedding until crushing or cutting. In their research they also found that steaming instead boiling is preferable to retain more of their water-soluble vitamins.
