Eosinophilic esophagitis (EoE) is a chronic inflammatory disorder of the esophagus that is compounded by both genetic predisposition and aberrant responses to environmental antigens, particularly those that are food derived.Researchers have identified a genetic signature for a severe, often painful food allergy â eosinophilic esophagitis.The most common cause of esophagitis is acid reflux, which most frequently results in heartburn. Acid reflux also can cause ulcers in the inner lining of the esophagus.
