Thermo-Stable Xylanases from Non Conventional Yeasts

The enzymatic hydrolysis of xylan is one of the most important industrial bioprocesses, xylan being the second most abundant natural polysaccharide. It is a heteropolysaccharide consisting of a chain of β-1,4-linked D-xylanopyranose units with substitution by acetyl, arabinosyl and glucopyranosyl residues.
