Bacillus cereus is an endemic soil dwelling, gram positive, rod shaped motile, beta haemolytic bacterium. This bacterium is harmful to humans and cause foodborne illness while some of the strains can be beneficial as probiotics for animals. It is the cause of fried rice syndrome as the bacteria are classically contacted from the fried rice dishes that have been sitting at room temperatures for a long time. These are facultative anaerobes and can produce endospores that are protective.
