Dr. James J. Chen received a Ph.D. degree in Statistics from Iowa State University in 1978.& In August 1983 Dr. Chen joined the National Center for Toxicological Research, U.S. Food and Drug Administration (USFDA), as a Senior Staff Fellow.& Currently, Dr. Chen is a Senior Biomedical Researcher in the Division of Personalized Nutrition and Medicine and Adjunct Professor in the Department of Biostatistics, University of Arkansas for Medical Sciences, and Adjunct Professor in the Department of Public Health, China Medical University, Taiwan.

Valentina Trinetta received her PhD in Food Science and Technology at the University of Milano (Italy) after several international research experiences (National Institute of Agronomic Research - Nantes, France and Food Science Department at Pennsylvania State University- State College, PA, USA). She is author of 20 publications in peer reviewed journals, national and international conferences.

Dr. Weiqun (George) Wang did BS in Biochemistry (1983), Nanjing University, China, PhD in Animal Physiology & Biochemistry (1990) Nanjing Agricultural University, China followed by Post-doc in Animal Science (1991-1992) Department of Animal Science, University of Hawaii. Presently he is an Associate Professor in Department of Human Nutrition, Kansas State University.

Arun K. Bhunia is presently Professor in Department of Food Science, Purdue University. He received his PhD in food microbiology from University of Wyoming followed by Postdoctoral in food microbiology, Immunology from University of Arkansas.

Sara Chelland Campbell  was recently hired as an Assistant Professor of Exercise Science at Rutgers University. Prior to joining Rutgers she was a postdoctoral fellow in the Department of Nutrition, Food and Exercise Sciences at Florida State University. Dr. Campbell’s postdoctoral research was supported by a USDA postdoctoral fellowship and focused on examining the anti-atherogenicity of flaxseed. She received her PhD from Florida State University in which she researched the acute effects of isocaloric energy expenditure on lipids, lipoproteins, and enzymes related to lipid transport including cholesterol ester transfer protein and lecithin cholesterol acyl transferase. She received both her MS and BS from Bloomsburg University of Pennsylvania Dr. Campbell has publications in several journals including Atherosclerosis, Preventive Medicine, European Journal of Applied Physiology, Menopause, and Research Quarterly in Sports Sciences. She is a member of the American College of Sports Medicine and American Society of Nutrition.

Dr. Yuanyuan Li received her Ph.D. in Oncology from the Chinese Academy of Medical Sciences and Peking Union Medical College, during the period of 2003 to 2006. She began her postdoctoral training in Dr. Tollefsbol’s lab at University of Alabama at Birmingham (UAB) in 2006. Dr. Li was elected as Assistant Research Professor in the Department of Biology at UAB in 2011 due to her extraordinary accomplishments. Her research interests focus primarily on epigenetic regulation of dietary components in cancer prevention and therapy. She also shows interests in bioactive diet regulated-aging control and longevity. She authored several scientific peer-reviewed papers in different prestigious journals and also served as an invited scientific reviewer for many highly respected journals such as Journal of Cellular Biochemistry, Life Science and Cancer Letters. Her research contributions have received international recognition. Especially, one of her papers was selected for press release by the Editors of the FASEB Journal and has been extensively reported by various media presses. This paper was also been awarded best paper by UAB-based investigator(s) in the area of obesity or nutrition. Dr. Li was frequently invited to give oral presentations at different academic occasions and to present her studies at several national and international conferences. She is a member of American Association for Cancer Research (AACR) since 2007. She received several grants such as Junior Faculty Development grant from American Cancer Society (ACS) and UAB Comprehensive Cancer Center and a postdoctoral training grant from American Institute of Cancer Research (AICR).

Shahla Wunderlich is Professor of Food and Nutrition and director of the American Dietetic Association (ADA), Internship Program at Montclair State University (MSU). She received her Ph.D. from Massachusetts Institute of Technology (MIT) in Nutritional Biochemistry and Metabolism. She received awards: Outstanding Dietetic Educator Award from ADA, 1996, Outstanding Faculty Award, 2003, and College of Education and Human Services, Recognition Award, 2004.She is an active member of the American Society for Nutritional Sciences, ADA, and a Fellow of the American College of Nutrition. She received several grants, most recently from the US Department of Health and Human Services. Her research findings in the area of nutritional biomarkers, and nutrition assessment in young and older adults have been published in highly regarded journals and presented at international and national meetings.She reviews nutrition textbooks, journals articles, and currently servers on the Nutrition Advisory Board for John Wiley & Sons, Inc.

He did his PhD from Department of Physics, Indian Institute of Technology Madras, India, M.S from  Department of Physics, Regional College of Education (NCERT) Mysore University, India. He did his B.S in  Electronics (ancillaries) Nagarjuna University, India.

Christopher Papandreou, RD, has a PhD in Public Health Sciences from the University of Crete where his research focused on the effectiveness of the Mediterranean diet on Obstructive Sleep Apnea-Hypopnea Syndrome.  He has also a Master of Science in Human Nutrition and Metabolism from the University of Aberdeen where he was involved in the Rascal project with a focus on the associations between sleep duration, physical activity and obesity in children and adults. During his doctorate he participated as research assistant in the 50-year follow-up of the Seven Countries Study and other studies. He has a 3-year teaching experience in tertiary education and has authored and co-authored research articles.

Dr. Reka Haraszi has received her PhD in chemistry in the Budapest University of Technology and Economics (Hungary) during the period of 1998-2002.  Currently, she is working as a researcher at the European Commission, Joint Research Centre, Institute of Reference Materials and Measurements in Geel, Belgium. She has two MSc diplomas in Bioengineering and Specialized Engineer in the Food Products Qualification. She has experience working in universities (Hungary), food industry (Hungary) and research institutes (Australia, Belgium). She is doing peer reviews for several journals and has 10 publications in peer reviewed journals and 25 in proceedings, in the field of cereal quality and nutrition, rheology, food proteomics and allergy.
